I make these protein bars every few weeks. We love them. Store in the fridge and when you need an energy hit, dig in. Super easy, super tasty, packed full of goodness.
1 cup of Sunflower seeds
1 cup of Pumpkin seeds
1/2 cup Sesame seeds
1/2 cup Chia seeds or Linseeds
1/2 cup crushed Peanuts
3/4 cup desiccated Coconut
1/2 cup Cranberries (or other dried fruit)
pinch of salt (if peanuts are salted skip this)
Mix all together
NEXT STAGE - Melt together in microwave approx. 30 - 45 secs:
1/3 cup of crunchy peanut butter
1/3 cup coconut oil
1/3 cup of honey
Once it's melted stir together then mix with your seed and nuts ingredients.
Put greaseproof paper in a largish baking dish (wet the baking paper first and wring it out , it makes it easier to place in the dish). Add your mixture, flattening it down and put in the Freezer for 30 mins.
Take it out and mark what size bars you want. It's easier doing it now before it completly sets.
Then put back in the freezer for another hour and try.
You can store them in the fridge.
